Cataplana Mussels

Try this simple mussel dish, for example, to really get the taste buds tingling!

Ingredients:

2lbs mussels, de-bearded and washed
3 shallots, sliced
¼ tsp garlic
2 lemons, juice of
1 tbsp chives cut into ¼ inch sticks)
1 tbsp chopped chervil
1 tbsp tarragon
1 tbsp Italian parsley
¼ cup white wine
2 tbsp butter

Method
Toss all ingredients in the cataplana
Close lid and place in a hot oven or on the stove for approximately 8 minutes 260°c
Open cataplana and serve immediately
Top Tip: open the Cataplana at the table and use one side for discarded shells
